And ultimately, there’s rarely one “correct” approach.

Plated service tends to create a more structured and intentional atmosphere. Guests remain seated, the pacing feels more guided, and the evening often carries a stronger sense of formality.


This approach works especially well for events centered around speeches, presentations, or a more traditional reception flow. It also allows for a very polished visual experience, where tables remain cohesive and the progression of the evening feels more curated.


Things to Consider


Because this style requires a larger service staff and more coordination behind the scenes, it can become one of the more production-heavy catering approaches depending on the scale and complexity of the event.

Family-Style Service


Family-style dining creates a more communal atmosphere, encouraging guests to connect more throughout dinner. The experience of sharing dishes tends to make the evening feel warmer, more relaxed, and socially engaging, while softening some of the formality that can come with larger celebrations.


Things to Consider


Family-style service works best when tables are thoughtfully styled and spaced to comfortably accommodate shared dishes throughout the meal. That relaxed look may or may not align with the overall tone hosts are hoping to create for their celebration.

Buffets & Food Stations


Station-style catering creates movement.


Rather than keeping guests anchored to one place, stations encourage people to move through the event more organically, interacting with different spaces and conversations throughout the night. This format often works especially well for larger celebrations and gatherings where hosts want the atmosphere to feel more social and dynamic.


And contrary to what many people assume, stations can feel incredibly elevated when approached intentionally. Thoughtful presentation, custom menus, chef interactions, and layered setups can transform them into immersive moments within the event itself, creating an experience that feels both interactive and highly personalized.

Stations require thoughtful planning, as layout, guest flow, and staffing all influence how seamless the experience feels. While this format can sometimes be more flexible than a plated dinner, larger installations and highly customized stations can also become more production-heavy depending on the vision for the event.
